THE PROCESS

Why Biltong instead of Jerky?

Unlike jerky, which is often smoked and sweetened, biltong is cured in vinegar, salt, and spices, then air-dried for around 4 days. The result is a tender, steak-like bite that keeps more of the meat's natural goodness, higher in protein and lower in carbs.
